We start with black tea (2nd flush TGFOP) from Happy Valley Estate in India’s acclaimed Darjeeling region. Don’t let the name fool you, Happy Valley is actually the highest altitude estate in the region, at 6300 feet, with tea bushes ranging from 80-160 years old. The elevation and mature tea bushes produce a stunning tea with notes of muscatel, toast, wine and subtle peach. We augment this exceptional Darjeeling with a zesty blend of chai spices, plus whole pink peppercorns and cardamom pods. If you want a faster, bolder brew, lightly crush the tea in a mortar and pestle before infusing. And of course, don’t forget the milk and honey!
