Young Bakers’ Camp – Mardi Gras Edition

We'll be making a variety of seasonal cookies and traditional Mardi Gras treats from around the world that participants will get to take home to share (or not). We’ll be making golabki (beef-stuffed cabbage leaves in tomato sauce), pierogi (potato, onion and cheese-stuffed dumplings), honey-glazed roasted carrots, garlic mushrooms, and Paczki, Poland’s decadent brioche donut. We'll be exploring the full range of possibilities that pate de choux (the egg-y dough that cream puffs and eclairs are made out of) presents us in creating delectable, whimsical pastries. We'll make eclairs filled with decadent Italian Buttercream and topped with chocolate ganache, pretzel eclairs filled with caramel cream, and even try our hand at zeppole, a fried puff filled with cannoli cream.
